Cooking Directions
In a medium saucepan combine rice, milk, sugar and salt. Bring to a boil, stirring frequently. Reduce heat to low and simmer 30-40 minutes, stirring often. In a medium microwave-safe dish, heat cream for 1 minute. Stir in 1 ½ cups chocolate chips. Continue to stir until chocolate is melted and sauce is smooth. Stir chocolate sauce, vanilla and liquor, if desired, into pudding. Cool to room temperature. Serve topped with remaining chips and garnish with mint, if desired.
